Soak the Watermelons (21 cups) rind in slightly salted water overnight.
Step 2
Boil the rind in the saltwater until it can be pierced with a fork.
Step 3
Drain.
Step 4
Boil the Granulated Sugar (7 cups) , Distilled White Vinegar (2 cups) , Ground Cloves (1/2 tsp) , and Ground Cinnamon (1/2 tsp) .
Step 5
Pour over the rind. Let stand overnight.
Step 6
Drain, reserving the liquid.
Step 7
Heat the syrup.
Step 8
Pour over rind. Let stand overnight.
Step 9
Heat the syrup with the rind until it comes to a boil.
Step 10
Put in jars and seal!
