Soak the Watermelon (7 pound) rind in slightly salted water overnight.
Boil the rind in the saltwater until it can be pierced with a fork.
Boil the Granulated Sugar (7 cup), Distilled White Vinegar (1 pint), Ground Cloves (1/2 teaspoon), and Ground Cinnamon (1/2 teaspoon).
Pour over the rind. Let stand overnight.
Drain, reserving the liquid.

Heat the syrup with the rind until it comes to a boil.
Put in jars and seal!
