Watermelons (21 cups)
rind in slightly salted water overnight.
Boil the rind in the saltwater until it can be pierced with a fork.
Granulated Sugar (7 cups)
Distilled White Vinegar (2 cups)
Ground Cloves (1/2 tsp)
Ground Cinnamon (1/2 tsp)
Pour over the rind. Let stand overnight.
Drain, reserving the liquid.
Pour over rind. Let stand overnight.
Heat the syrup with the rind until it comes to a boil.
Put in jars and seal!
