Step 1
Peel all the
Garlic (1 head)
and fry in a pan with enough
Olive Oil (as needed)
to cover the bottom.
Step 2
While the garlic slowly starts frying, start cutting up the
Whole Chicken (1)
. Remove the skin and season with
Salt (to taste)
.
Step 3
Next, coat the chicken pieces in
All-Purpose Flour (to taste)
and place them in the pan alongside the garlic.
Step 4
Once the chicken pieces are golden brown and crispy on both sides, pour in the
White Wine (3/4 cup)
. Cook together for 5-10 minutes on medium heat so that the alcohol evaporates but adds flavor to the dish.
Step 5
Slowly add
Water (to taste)
every 10 minutes for the next 40 minutes. If it starts drying up add water. The chicken has to cook on medium-low heat.
Step 6
While the chicken is cooking, peel, clean, and cut the
Potatoes (to taste)
into small cubes. Fry them in
Olive Oil (as needed)
and season with
Salt (to taste)
.
Step 7
Once fried to a golden brown color, remove and place on a plate with paper towels to dry the excess oil.
Step 8
Add the fried potatoes to the chicken and mix. Serve.
