Peel all the Garlic (1 head) and fry in in a pan with enough Olive Oil (to taste) to cover the bottom.
While the garlic slowly starts frying, start cutting up the Organic Whole Chicken (1). Remove the skin and season with Salt (to taste).
Next, coat the chicken pieces in All-Purpose Flour (to taste) and place them in the pan alongside the garlic.
Once the chicken pieces are golden brown and crispy on both sides, pour in the White Wine (200 milliliter). Cook together for 5 to 10 minutes on medium heat so that the alcohol evaporates but adds flavor to the dish.
Slowly add Water (to taste) every 10 minutes for the next 40 minutes. If it starts drying up add water. The chicken has to cook on medium-low heat.
While the chicken is cooking, peel, clean and cut the Potato (to taste) into small cubes. Fry them in Olive Oil (to taste) and season with Salt (to taste). Once fried to a golden brown color, remove and place on a plate with paper towels to dry the excess oil.
Add the fried potatoes to the chicken and mix. Serve.
