Coriander Roasted Potatoes

Here’s a simple but sexy way to dress up ordinary potatoes. The entire dish takes under an hour to make.

Ingredients

3 tsp Coriander Seeds
1/4 cup Olive Oil
1 cup Loosely Packed Fresh Cilantro Leaf
to taste Kosher Salt
to taste Freshly Ground Black Pepper

STEP 1
Preheat the oven to 400 degrees F (205 degrees C). Line a baking sheet with parchment paper.
STEP 2
Peel the Potato (2 lb) and cut them into small pieces. Place the pieces in a large bowl.
STEP 3
Use a mortar or a kitchen mallet to roughly crush the Coriander Seeds (3 tsp). Add the Olive Oil (1/4 cup) and coriander seeds to the poatoes and toss to coat.
STEP 4
Season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste) to taste and toss again. Spread the coated potatoes out on the prepared baking sheet.
STEP 5
Place in oven and roast for 30 minutes.
STEP 6
Remove from oven, transfer to a bowl or serving platter. Toss with the Fresh Cilantro Leaf (1 cup) and serve immediately.
