Step 1
Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
Step 2
Peel the
Potatoes (2 lb)
and cut them into small pieces. Place the pieces in a large bowl.
Step 3
Use a mortar or a kitchen mallet to roughly crush the
Whole Coriander Seeds (1 Tbsp)
. Add the
Olive Oil (1/4 cup)
and coriander seeds to the potatoes and toss to coat.
Step 4
Season with
Kosher Salt (to taste)
and
Freshly Ground Black Pepper (to taste)
and toss again. Spread the coated potatoes out on the prepared baking sheet.
Step 5
Place in oven and roast for 30 minutes.
Step 6
Remove from oven, transfer to a bowl or serving platter. Toss with the
Fresh Cilantro Leaves (1 cup)
and serve immediately.
