Honey Quinoa Granola

Old Fashioned Rolled Oats

4 Tbsp

Quinoa

•

3 Tbsp

Sweetened Shredded Coconut

•

4 Tbsp

Pecans

or Nuts of Choice

Honey

1 tsp

Vanilla Extract

Cooking Instructions

Preheat oven to 325 degrees F (160 degrees C) and prepare a sheet pan with a silicone liner or parchment paper.

Cook Quinoa (4 Tbsp) to package instructions and set aside.

If you have whole Pecans (4 Tbsp) , chop them. Mine were pre-chopped.

Melt Butter (4 Tbsp) in a pan.

Combine the Old Fashioned Rolled Oats (1 1/2 cups) , Sweetened Shredded Coconut (3 Tbsp) , pecans and quinoa in a large bowl.

Once the butter has melted, add the Honey (4 Tbsp) and Vanilla Extract (1 tsp) .

Add the wet mixture to the bowl and mix well.

Spread granola mixture on the sheet pan in one even layer.

Bake granola for 35 to 45 minutes until toasted and dried, shaking the pan every 20 minutes or so.

Allow the granola to cool completely before storing - this will ensure crunchy granola. Serve as desired.

Author's Notes

This is not a very sweet granola. Add 1-2 more tablespoons of honey for a sweeter end result.
