Step 1
Slice
Sweet Potato (1)
lengthwise about 4 millimetres thick. Depending on the size of the potato, you may get 6 toasties.
Step 2
Preheat oven to 350 degrees F (176 degrees C). Grease or place parchment paper on a baking sheet
Step 3
Place sweet potato toasties on a baking sheet. Season with
Sea Salt (to taste)
and
Ground Black Pepper (to taste)
and give a little drizzle of
Extra-Virgin Olive Oil (1/2 tsp)
.
Step 4
Bake for 30-35 minutes until they are fork tender. You may wish to cook them longer to get them crusty or you could simply pop them in your toaster just before you dress them up. They will cook faster if they are cut thinner so check them at 25 minutes to make sure they don't burn.
Step 5
Put the
Navy Beans (1 can)
into a large salad bowl. Using a potato masher, mash some of the beans. Add the
Red Onion (1/2)

Garlic (1 clove)
,
Celery (2 stalks)
,
Lemons (to taste)
,
Sea Salt (to taste)
,
Ground Black Pepper (to taste)
, and
Extra-Virgin Olive Oil (to taste)
.
Step 6
Spoon over top of sweet potato toastie. This recipe will make more than enough that you can enjoy the rest as a salad, or make more toasties!
