Preheat oven to 350 degrees F (180 degrees C).
Prepare Pie Crust by mixing together
Graham Crackers (2 pckg)
Coconut Sugar (1/3 cup)
Butter (1/2 cup)
Pour and spread the mixture evenly in an 8 or 9-inch pie shell; pressing to form a nice crust.
Allow to cool completely before filling.
While Crust is cooling, whip
Heavy Cream (1 1/4 cups)
until soft peaks form. Set to the side.
Vanilla Greek Yogurt (2 cups)
, zest and juice from
into a bowl and mix together well.
Powdered Confectioners Sugar (2/3 cup)
and mix together well.
Fold the yogurt mixture into the whipped cream. Stir until well blended.
Pour the cream and yogurt mixture into the cooled pie crust.
Place into the freezer and freeze 1-2 hours before serving.
Whipped Cream (to taste)
Limes (to taste)
and the reserved graham cracker crumbs.
