Step 1
Add your
Potato (1)
and
Water (3/4 cup)
into a large microwaveable mug. Cook in a microwave oven for 3-4 min or until the potatoes are tender. Check on it halfway through and stir.
Step 2
Once cooked drain away the cooking water.
Step 3
Stir the
Bacon (1 slice)
,
Cheddar Cheese (2 Tbsp)
,
Onion Flakes (1 Tbsp)
and
Corn Starch (1/2 Tbsp)
. The cornstarch will thicken your soup.
Step 4
Stir in the
Chicken Broth (1/2 cup)
and
Milk (1/4 cup)
and season with
Salt (to taste)
and
Ground Black Pepper (to taste)
.
Step 5
Place in a microwave oven and cook for 2 1/2 - 3 minutes or until it thickens and all of your ingredients have heated through. Keep an eye on your mug while in the microwave so it doesn’t overcook.
Step 6
Serve topped with
Sour Cream (to taste)
and some more sprinkles of bacon and chives.
