Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Into a mixing bowl, add
Lean Ground Beef (1.1 lb)
,
Yellow Onion (1/2)
,
Garlic (2 cloves)
,
Egg (1)
,
Italian Seasoning (1/2 Tbsp)
, and
Breadcrumbs (1 1/2 cups)
. Using your hands, mix together until well-combined. Form the meat mixture into a disk shape.
Step 3
Split into 8 even pieces. Roll each piece in your hands into a rough ball.
Step 4
Press each meatball into its own cup in a greased mini loaf pan. Press them down to fill out the shape, then even out the surface.
Step 5
On top of each mini meatloaf, add
Ketchup (to taste)
and
Yellow Mustard (to taste)
. Spread over the surface.
Step 6
Top each mini meatloaf with
Cheddar Cheese (to taste)
.
Step 7
Bake for 20-25 minutes.
Step 8
Transfer meatloaves to a plate lined with paper towels to drain excess grease. Serve with your favorite meatloaf sides!
