Step 1
Cut the
Cantaloupes (1 cup)
into a half-inch dice, and add to a large mixing bowl.
Step 2
Cut the
Watermelons (1 1/2 cups)
into a half-inch dice, and add to the bowl.
Step 3
Peel and seed the
Cucumber (1)
and cut it into a half-inch dice. Add it to the bowl.
Step 4
Peel and cut the
Jicama (1)
into a half-inch dice, and add to the bowl.
Step 5
Prepare your
Red Onions (1/4 cup)
and add to the bowl.
Step 6
Thinly slice the
Serrano Chili (1)
. Remove the seeds if you want less heat.
Step 7
Add the serrano pepper to the bowl.
Step 8
Add the crumbled
Queso Fresco (1 cup)
.
Step 9
In a small bowl combine the zest of the
Lime (1)
and
Agave Syrup (3 Tbsp)
. Cut the lime in half and add 3 Tbsp fresh lime juice to the agave mixture. Stir to combine and pour over the salad.
Step 10
Toss until the fruit and veg are coated. Chill for 30 minutes.
Step 11
Sprinkle
Fresh Mint (2 Tbsp)
and additional queso fresco on the salad, and serve.
