Dice up the Tomatoes (4 1/2 cups) and set it aside. In a large saucepan, add in a bit of Olive Oil (as needed) over medium heat. Put in the crushed Garlic (2 cloves) and Fresh Ginger (1 Tbsp). Stir and cook for about a minute.

Add the diced tomatoes into the saucepan.

Add in the Red Chili Pepper (1), Sweet Chili Sauce (2/3 cup), Brown Sugar (1/2 cup), and the juice from the Limes (2). Season with some Salt (to taste) and Simply Organic Black Pepper, Medium Grind (to taste). Stir well and allow the mixture to come to a boil.

Once boiling, reduce the heat to simmer gently for about 30 minutes or until the mixture has thickened up.

Gently stir the sauce and take it off the heat. While it's still hot, transfer it into a sterile jar and it's ready to be stored or served.
