Step 1
Dice up the
Tomatoes (1.8 lb)
and set it aside. In a large saucepan, add in a bit of
Olive Oil (as needed)
over medium heat. Put in the crushed
Garlic (2 cloves)
and
Fresh Ginger (1 Tbsp)
. Stir and cook for about a minute.
Step 2
Add the diced tomatoes into the saucepan.
Step 3
Add in the
Red Chili Pepper (1)
,
Sweet Chili Sauce (2/3 cup)
,
Brown Sugar (1/2 cup)
, and the juice from the
Limes (2)
. Season with some
Salt (to taste)
and
Ground Black Pepper (to taste)
. Stir well and allow the mixture to come to a boil.
Step 4
Once boiling, reduce the heat to simmer gently for about 30 minutes or until the mixture has thickened up.
Step 5
Gently stir the sauce and take it off the heat. While it's still hot, transfer it into a sterile jar and it's ready to be stored or served.
