Dice up the Tomatoes (4 1/2 cups) and set it aside. In a large saucepan, add in a bit of Olive Oil (as needed) over medium heat. Put in the crushed Garlic (2 cloves) and Fresh Ginger (1 Tbsp). Stir and cook for about a minute.

Add the diced tomatoes into the saucepan.

Add in the Red Chili Pepper (1), Sweet Chili Sauce (2/3 cup), Brown Sugar (1/2 cup), and the juice from the Limes (2). Season with some Salt (to taste) and Ground Black Pepper (to taste). Stir well and allow the mixture to come to a boil.

Once boiling, reduce the heat to simmer gently for about 30 minutes or until the mixture has thickened up.
