Preheat the oven at 350 degrees F (180 degrees C).
In a mixing bowl, place Brown Sugar (1 cup) and Vegan Butter (1/2 cup). Using a hand mixer, cream the mixture until the sugar is dissolved.
Add Unsweetened Soy Milk (1/4 cup) and Vanilla Extract (1 tablespoon) and mix to combine.
Once combined, sift the All-Purpose Flour (2 cup), Baking Powder (1 teaspoon), Baking Soda (1 teaspoon), Corn Starch (2 teaspoon), and Salt (1/2 teaspoon) into the bowl before mixing again.
Add Vegan Chocolate Chips (1 cup) and stir until it's all combined.
Roll the cookie dough into little balls and evenly space them over a baking tray lined with non-stick parchment paper.
Bake for 10 minutes, or until they're brown and hard on the outside.
Take the cookies out of the oven and let them to sit on the tray for 15 minutes before transferring to a wire rack to allow them to cool completely. Enjoy!
