Step 1
Preheat the oven at 350 degrees F (180 degrees C).
Step 2
In a mixing bowl, place
Brown Sugar (1 cup)
and
Vegan Butter (1/2 cup)
. Using a hand mixer, cream the mixture until the sugar is dissolved.
Step 3
Add
Unsweetened Soy Milk (1/4 cup)
and
Vanilla Extract (1 Tbsp)
and mix to combine.
Step 4
Once combined, sift the
All-Purpose Flour (2 cups)
,
Baking Powder (1 tsp)
,
Baking Soda (1 tsp)
,
Corn Starch (1/2 Tbsp)
, and
Salt (1/2 tsp)
into the bowl before mixing again.
Step 5
Add
Vegan Chocolate Chips (1 cup)
and stir until it's all combined.
Step 6
Roll the cookie dough into little balls and evenly space them over a baking tray lined with non-stick parchment paper.
Step 7
Bake for 10 minutes, or until they're brown and hard on the outside.
Step 8
Take the cookies out of the oven and let them to sit on the tray for 15 minutes before transferring to a wire rack to allow them to cool completely. Enjoy!
