Preheat oven to 400 degrees F (200 degrees C).
Peel and add the Onion (1), Fresh Ginger (2 tablespoon), Chili Pepper (1) and Garlic (2 clove) to a food processor.
Add Water (1 tablespoon) a drizzle of Extra-Virgin Olive Oil (to taste). Blend until smooth.
Pour into a bowl. Add in Ground Turmeric (1 teaspoon), Smoked Paprika (1 teaspoon) and Cumin Seeds (1 1/2 teaspoon).
Season with Salt (to taste), Apple Cider Vinegar (1 tablespoon) mix well to form a curry paste.
Cut Cauliflower (1 head) into large florets and place in an oven safe dish.
Pour the curry paste onto the cauliflower and drizzle with more Extra-Virgin Olive Oil (to taste) on top. Mix well. Place in the oven and roast for 30 to 35 minutes or until golden brown on the edges.
Remove from the oven. Top with Green Peas (1/2 cup), Salt (to taste) and Fresh Cilantro (1 handful).
Toss ingredients together and serve.
