Step 1
Preheat oven to 400 degrees F (200 degrees C).
Step 2
Peel and add the
Onion (1)

Fresh Ginger (2 Tbsp)
,
Chili Pepper (1)
and
Garlic (2 cloves)
to a food processor.
Step 3
Add
Water (1 Tbsp)
and a drizzle of
Extra-Virgin Olive Oil (as needed)
. Blend until smooth.
Step 4
Pour into a bowl. Add in
Ground Turmeric (1 tsp)
,
Smoked Paprika (1 tsp)
and
Cumin Seeds (1/2 Tbsp)
.
Step 5
Season with
Salt (to taste)
,
Apple Cider Vinegar (1 Tbsp)
mix well to form a curry paste.
Step 6
Cut
Cauliflower (1 head)
into large florets and place in an oven safe dish.
Step 7
Pour the curry paste onto the cauliflower and drizzle with more
Extra-Virgin Olive Oil (as needed)
on top. Mix well. Place in the oven and roast for 30 to 35 minutes or until golden brown on the edges.
Step 8
Remove from the oven. Top with
Green Peas (1/2 cup)
,
Salt (to taste)
and
Fresh Cilantro (1 handful)
.
Step 9
Toss ingredients together and serve.
