Prepare the Cantaloupe (2 cup), Tomato (1 cup), Cucumber (1/2 cup), and Red Onion (1/2 cup). Dice the Fresh Mint (2 tablespoon) and Fresh Basil (2 tablespoon).
Toss Cayenne Pepper (to taste), tomatoes, onion and cucumber to the bowl. Toss together with the melon in a large bowl.
Whisk together Balsamic Vinegar (3 tablespoon), mint, basil, Salt (to taste), and Ground Black Pepper (to taste), and a bit of cayenne, if using. Stream in Olive Oil (2 tablespoon) as you whisk.
Toss melon mixture with dressing. Add crumbled Feta Cheese (4 ounce) Taste and adjust seasoning if needed. Serve and enjoy!
