Prepare the Cantaloupes (2 cups), Tomato (1 cup), Cucumber (1/2 cup), and Red Onion (1/2 cup). Dice the Fresh Mint (2 Tbsp) and Fresh Basil (2 Tbsp).
step 1 Prepare the Cantaloupes (2 cups), Tomato (1 cup), Cucumber (1/2 cup), and Red Onion (1/2 cup). Dice the Fresh Mint (2 Tbsp) and Fresh Basil (2 Tbsp).

Toss Cayenne Pepper (to taste), tomatoes, onion and cucumber to the bowl. Toss together with the melon in a large bowl.

Whisk together Balsamic Vinegar (3 Tbsp), mint, basil, Salt (to taste), and Ground Black Pepper (to taste), and a bit of cayenne, if using. Stream in Olive Oil (2 Tbsp) as you whisk.

Toss melon mixture with dressing. Add crumbled Feta Cheese (3/4 cup) Taste and adjust seasoning if needed. Serve and enjoy!
