Fresh Blueberries
or Thawed Frozen Blueberries

1/3
cup
Chia Seeds
•
2
cups
Unsweetened Coconut Milk
•
to taste
Vanilla Extract
•
to taste

Cooking Instructions

In a large container add the Fresh Blueberries (1 cup) and mash them down as much as you can.

Next, add in the Chia Seeds (1/3 cup), Unsweetened Coconut Milk (2 cups) and Vanilla Extract (to taste). Give it a good mix until everything is combined.

Pour the mixture into any dessert dishes, mugs or glasses you'd like. Place in the fridge and let it set for at least 4 hours or overnight. After the first hour give it a quick stir, and then let it continue to set.
4.
Before serving, garnish with Pistachios (to taste) if desired!
Author's Notes
Serving size depends on the size of your glasses! Can make 2 large glasses of pudding or 4 smaller glasses of pudding.
