This cold noodle dish is very rich in taste, from the aromatic sesame paste, creaminess of the peanut butter, crunchiness of the cucumber and refreshment of the spring onion along with crispy toasted peanuts.

Soba Noodles
I used white soba noodles
2 Tbsp
Sesame Paste
1 Tbsp
Peanut Butter
1/4 cup
Warm Water
to taste
Chili Oil
(optional)
Topping
5.5 oz
Firm Tofu , diced
1 pinch
1
Spring Onion , shredded
1/3
Cucumber , shredded
2 Tbsp
Dry Roasted Peanuts , crushed

Author's Notes

You can replace the peanut butter with almond butter if you have a peanut allergy.

Directions

Step 1
Heat the Olive Oil (1 tsp) in a large, non-stick frying pan, add the Firm Tofu (5.5 oz) and fry for 5-7 minutes, turning frequently, until it turns golden in colour.
Step 2
Add a pinch of Salt (1 pinch) to the tofu and toss gently for 1 minute, then set aside.
