Simple mixed chickpea and pesto with a pinch of salt, mashed it a little with a fork and you've made a sandwich out of it. It's so tasty and certainly will satisfy any hunger within 10 minutes.

Cooking Instructions

Step 1
Add the Chickpeas (1 can), Baby Watercress (1 1/4 teaspoon), Lemon Juice (1 tablespoon), Vegan Basil Pesto (1 tablespoon) and Salt (1 pinch) into a food processor, blend for 1-2 minutes. You can alternatively mash the chickpeas by hand with a fork then add the rest of the ingredient and mix.
Step 2
To assemble your sandwiches, spread the chickpea paste, Tomato (1) and the rest of the Baby Watercress (1 1/4 teaspoon) on the Whole Grain Bread (4 slice) and serve.
