Step 1
Add the Chickpeas (1 can) , Baby Watercress (1 1/4 tsp) , juice from Lemon (1) , Vegan Basil Pesto (1 Tbsp) and Salt (1 pinch) into a food processor, blend for 1-2 minutes. You can alternatively mash the chickpeas by hand with a fork then add the rest of the ingredients and mix.
Step 2
To assemble your sandwiches, spread the chickpea paste, Tomato (1) and the rest of the Baby Watercress (1 1/4 tsp) on the Whole Grain Bread (4 slices) and serve.
