Make 1/4 inch cuts into your pork all over. Then rub the pork with 2 tablespoons of salt.
Preheat oven to 350 degrees F (180 degrees C).

. Use just enough water to cover pork 1/2 way. Roast until pork is easily pulled apart with a fork, around 4 hours.
