Step 1
Slice the
Shiitake Mushrooms (2 cups)
. Thinly slice the
Onion (1/2)
.
Step 2
Chop the
Garlic (4 cloves)

Step 3
Bring a large pot of water to a boil.
Step 4
In a large frying pan over medium-high heat, melt half of the
Butter (1/2 Tbsp)
and add the onion.
Salt (to taste)
and cook until browned and soft for about 6 minutes
Step 5
Add the garlic cloves (4) and stir for another 3 minutes.
Step 6
Add the remaining
Butter (1/2 Tbsp)
, melt and add the shitake mushroom and
Vegetable Stock (1/4 cup)
. Season with salt. Turn up the heat and sautee until browned.
Step 7
Drop the
Broccoli Rabe (1 bunch)
into the boiling water to blanch for 3 to 4 minutes. Drain and add to the frying pan with the shitake mushroom and onion, and cover until the rabe is completely softened.
Step 8
Remove the cover and allow the juices released to simmer off. Add any salt needed.
