Combine Apple Cider (4 cups), Cinnamon Sticks (2), Ground Nutmeg (1/4 tsp), Whole Clove (1 tsp), and Whole Allspice (1/2 tsp) in a sauce pot over medium-high heat. Bring to a boil, then cover and reduce to a simmer for 10 to 15 minutes.

Juice the Lemon (1) and reserve the rind. In a pitcher, combine White Mezcal (10 fl oz), Cointreau (5 fl oz) and lemon juice. Stir until combined.

When you are ready to pour the drinks, thinly slice the Apple (1). Combine Ground Cinnamon (1 tsp) and Granulated Sugar (3 Tbsp) in a dish. Use the lemon rind to dampen the rim of the glasses, then dip them into the dish with the cinnamon and sugar.
