Step 1
Preheat oven to 250 degrees F (120 degrees C).
Step 2
Add Gluten-Free Rolled Oats (3 cups) to a large bowl.
Step 3
Add Unsalted Slivered Almonds (1 cup) , Roasted Pumpkin Seeds (1/2 cup) , Unsweetened Coconut Flakes (3/4 cup) , Chopped Pecans (1/2 cup) , and Pumpkin Pie Spice (1 tsp) . Mix to combine.
Step 4
In a medium bowl, combine Vanilla Extract (1/2 Tbsp) , Honey (1/4 cup) , Organic Coconut Oil (1/4 cup) , Pure Maple Syrup (1/4 cup) , and Sea Salt (to taste) . Mix well and pour into the oat mixture while stirring to coat evenly.
Step 5
Pour granola onto a large sheet pan lined with parchment paper to prevent sticking.
Step 6
Spread evenly over the pan in a single layer.
Step 7
Bake for 1 hour and 15 minutes on the center rack of the oven, stirring every 15 minutes so the granola browns evenly.
Step 8
Remove from the oven and let cool. Spoon into a container and seal. Store in a cool, dry cupboard. Enjoy!
