Preheat oven to 250 degrees F (120 degrees C).
Gluten-Free Rolled Oats (3 cups)
to a large bowl.
Unsalted Slivered Almonds (1 cup)
Roasted Pumpkin Seeds (1/2 cup)
Unsweetened Coconut Flakes (3/4 cup)
Chopped Pecans (1/2 cup)
Pumpkin Pie Spice (1 tsp)
. Mix to combine.
In a medium bowl, combine
Vanilla Extract (1/2 Tbsp)
Honey (1/4 cup)
Coconut Oil (1/4 cup)
Pure Maple Syrup (1/4 cup)
Sea Salt (to taste)
. Mix well and pour into the oat mixture while stirring to coat evenly.
Pour granola onto a large sheet pan lined with parchment paper to prevent sticking.
Spread evenly over the pan in a single layer.
Bake for 1 hour and 15 minutes on the center rack of the oven, stirring every 15 minutes so the granola browns evenly.
Remove from the oven and let cool. Spoon into a container and seal. Store in a cool, dry cupboard. Enjoy!
