Roasted Pepitas

or Raw Pepitas

Chopped Pecans

Unsweetened Coconut Flakes

Pumpkin Pie Spice

Honey

Pure Maple Syrup

Cooking Instructions

Preheat oven to 250 degrees F (120 degrees C).

Add Gluten-Free Rolled Oats (3 cups) to a large bowl.

Add Unsalted Slivered Almonds (1 cup) , Roasted Pepitas (1/2 cup) , Unsweetened Coconut Flakes (3/4 cup) , Chopped Pecans (1/2 cup) , and Pumpkin Pie Spice (1 tsp) . Mix to combine.

In a medium bowl, combine Vanilla Extract (2 tsp) , Honey (4 Tbsp) , Coconut Oil (4 Tbsp) , Pure Maple Syrup (4 Tbsp) , and Sea Salt (to taste) . Mix well and pour into the oat mixture while stirring to coat evenly.

Pour granola onto a large sheet pan lined with parchment paper to prevent sticking.

Spread evenly over the pan in a single layer.

Bake for 1 hour and 15 minutes on the center rack of the oven, stirring every 15 minutes so the granola browns evenly.

Remove from the oven and let cool. Spoon into a container and seal. Store in a cool, dry cupboard. Enjoy!
