Step 1
In a large bowl, sift together the
All-Purpose Flour (5 2/3 cups)
and
Salt (1 tsp)
. Set aside.
Step 2
Using an electric mixer or hand mixer, cream together the
Unsalted Butter (2 cups)
and
Granulated Sugar (2 cups)
until fluffy and pale, about 5 minutes.
Step 3
Beat in the
Large Eggs (2)
and
Pure Vanilla Extract (1 Tbsp)
.
Step 4
Add flour mixture and
Matcha Powder (1/3 cup)
and mix on low speed until thoroughly combined.
Step 5
Remove half of the dough from the bowl, make it into a disc about 2" thick, and wrap in plastic wrap. Repeat with the remaining dough. Chill both discs of dough for about 45 minutes.
Step 6
Remove one disc and remove plastic wrap. Place on a floured surface, and roll out to a 1/4" thickness.
Step 7
Preheat your oven to 325 degrees F (160 degrees C). Slide your parchment paper and dough onto a board, then place in refrigerator for about 15 minutes.
Step 8
Use your Yoda cookie cutter and place them on a sheet pan lined with parchment or a silicone mat.
Step 9
Bake for 10 to 12 minutes until they begin to brown a bit on the edges.
Step 10
Cool sheets on wire racks for 10 minutes, then gently remove cookies and place on wire racks to finish cooling. Enjoy!
