Heat oven to 250 degrees F (120 degrees C). In a bowl, beat the Egg (8), Eggnog (2 cup), and Granulated Sugar (1/4 cup).
Add Vanilla Extract (1 teaspoon) and Ground Cinnamon (1 teaspoon), and beat again.
Slice the Croissants (24) in half lengthwise. Working in batches, submerge and soak the halves in eggnog mixture for a minute. Cook in a greased pan or hot griddle over medium heat until golden brown on both sides and cooked through for about 3 to 4 minutes per side.
Transfer to a baking sheet and keep warm in the oven until you are ready to serve.
To serve, stack the pieces and dust with Powdered Confectioners Sugar (to taste).
Then drizzle with Maple Syrup (to taste).
