Cut the Sourdough Bread (2 slice) into thick slices.
Spread one slice of bread with Unsalted Butter (1/2 tablespoon)
Place butter side down on the cutting board. Top unbuttered side of the bread with Cheddar Cheese (3 slice).
Layer Fresh Raspberries (1/4 cup) over the cheese.
Gently mash the raspberries.
Top with chopped Dark Chocolate (1/4 cup) and remaining Cheddar Cheese (3 slice).
Place second slice of bread on top and spread with Unsalted Butter (1/2 tablespoon)
Heat a nonstick small skillet over medium heat. Slide in Unsalted Butter (1/2 tablespoon)
Once butter has melted, place sandwich in skillet.
When underside is golden brown, about 4 minutes, turn sandwich and cook for another 4 minutes until both sides are golden brown. Eat immediately and enjoy!
