Thick Sourdough Bread
1 Tbsp
1/3 cup
Gruyère Cheese , grated
1.5 oz
Brie Cheese , sliced
1/3 cup
4 1/2 cups
3 slices
Pancetta

Step 1
Prepare all the ingredients.
Step 2
Sauté the Fresh Spinach (4 1/2 cups) .
Step 3
Cut 2 thick slices of the Sourdough Bread (2 slices) .
Step 4
Spread 1 slice of bread with Unsalted Butter (1/2 Tbsp)
Step 5
Place butter side down on the cutting board. Top unbuttered side of the bread with grated Gruyère Cheese (1/3 cup) .
Step 6
Add the Spinach.
Step 7
Add grated Cheddar Cheese (1/3 cup) .
Step 8
Add Pancetta (3 slices) .
Step 9
Add sliced Brie Cheese (1.5 oz) and sprinkle with Ground Black Pepper (to taste) .
Step 10
Place second slice of bread on top and spread with the other Unsalted Butter (1/2 Tbsp)
Step 11
Heat small nonstick skillet over medium heat. Add Olive Oil (1 Tbsp) . Once oil is hot but not smoking, place the sandwich in skillet.
Step 12
When underside is golden brown, about 4 minutes, turn sandwich and cook for another 4 minutes until both sides are golden brown.
Step 13
Cut in half and serve immediately, while cheese is still melty.
