Ingredients

1 Sourdough Bread
1 tablespoon Unsalted Butter
1.5 ounce grated Gruyère Cheese
1.5 ounce sliced Brie Cheese
0.25 pound Fresh Spinach
3 slice Pancetta
1 tablespoon Olive Oil

STEP 1
Assemble all the ingredients. Sauté the Fresh Spinach (0.25 pound).
STEP 2
Cut 2 thick slices of Sourdough Bread (1).
STEP 3
Spread 1 slice of bread with Unsalted Butter (1/2 tablespoon)
STEP 4
Place butter side down on the cutting board. Top unbuttered side of the bread with grated Gruyère Cheese (1.5 ounce).
STEP 5
Add the Spinach.
STEP 6
Add grated Cheddar Cheese (1.5 ounce).
STEP 7
Add Pancetta (3 slice).
STEP 8
Add sliced Brie Cheese (1.5 ounce) and sprinkle with Ground Black Pepper (to taste).
STEP 9
Place second slice of bread on top and spread with the other Unsalted Butter (1/2 tablespoon)
STEP 10
Heat small nonstick skillet over medium heat. Add Olive Oil (1 tablespoon) once oil is hot but not smoking, place sandwich in skillet.
STEP 11
When underside is golden brown, about 4 minutes, turn sandwich and cook for another 4 minutes until both sides are golden brown.
STEP 12
Eat immediately!

I enjoyed the cheese combination with the sauteed spinach, but I didn't think the pancetta worked with this sandwich. Looking at the photos in this recipe, i almost wonder if they meant to call for prosciutto. The saltiness of the cured meat could work well, but the soft cheese when melty is naturally oily, so the fatty pancetta was too much.
