For the polenta, bring Water (6 cup), Garlic Paste (1 teaspoon), Salt (1 teaspoon), and Cayenne Pepper (1 teaspoon) to a simmer.
Add Coarse Cornmeal (1 1/2 cup) and simmer until cornmeal is soft, about 40 minutes.
Add Cheese (1/2 cup), Butter (2 tablespoon), and Heavy Cream (1/2 cup). Check/adjust seasoning.
Score and sautee Spicy Italian Sausage (1).
When sausage is done, set aside, add Scallion (to taste) to the pan, saute one minute and remove to absorbent paper.
Poach the Egg (1) to desired doneness.
Plate polenta with sausage, poached egg and scallions on top. Serve and enjoy!
