Preheat oven to 200 degrees C (400 degrees F).
Boil Cauliflower (1) in salted water for 6 minutes.
Drain and allow excess water to run out.
Place cauliflower on a lined baking tray.
In a pestle and mortar (or food processor), add the Garam Masala (2 teaspoon), roughly chopped Garlic (3 clove), Salt (to taste), Olive Oil (1/4 cup), Crushed Red Pepper Flakes (1/2 teaspoon), Ground Turmeric (1 teaspoon), and grated Fresh Ginger (2 teaspoon).
Stir in the Greek Yogurt (1/2 cup).
Brush the mixture all over the cauliflower.
Place in the oven for 35-40 mins, or until it is done to your likeness.
In the meantime make the coriander and mint relish: In a pestle and mortar, or a food professor add the Fresh Ginger (4 teaspoon), Chili Pepper (2), Cashew Nuts (1/3 cup), Salt (to taste)
Lemon (to taste), Fresh Cilantro (1 bunch), and Fresh Mint (1 bunch).
Grind to a paste.
Remove cauliflower from the oven.
Slice the whole cauliflower.
Plate cauliflower and relish.
