Step 1
Preheat oven to 200 degrees C (400 degrees F).

Boil
Cauliflower (1)
in salted water for 6 minutes.
Step 3
Drain and allow excess water to run out.
Step 4
Place cauliflower on a lined baking tray.

In a pestle and mortar (or food processor), add the
Garam Masala (1/2 Tbsp)
, roughly chopped
Garlic (3 cloves)

Salt (to taste)

Olive Oil (1/4 cup)
,
Crushed Red Pepper Flakes (1/2 tsp)

Ground Turmeric (1 tsp)
, and grated
Fresh Ginger (1/2 Tbsp)

Stir in the
Greek Yogurt (1/2 cup)

Brush the mixture all over the cauliflower.
Step 9
Place in the oven for 35-40 mins, or until it is done to your likeness.

In the meantime make the coriander and mint relish: In a pestle and mortar, or a food professor add the
Fresh Ginger (1 Tbsp)

Cashew Nuts (1/3 cup)

Salt (to taste)

Lemons (to taste)

Fresh Cilantro (1 bunch)

Fresh Mint (1 bunch)

Grind to a paste.
Step 13
Remove cauliflower from the oven.
Step 14
Slice the whole cauliflower.
Step 15
Plate cauliflower and relish.
