Step 1
Place the Fresh Mint (2/3 cup) , Extra-Virgin Olive Oil (2 Tbsp) , Grated Parmesan Cheese (2 Tbsp) , Salt and Pepper (to taste) , Pumpkin Seed Butter (2 Tbsp) , and Garlic (1 clove) into a food processor.
Step 2
Blend until creamy.
Step 3
Cook Pasta (7 oz) based on package instructions.
Step 4
Drain it and dress it with your pesto. Serve it up with some more grated parmesan cheese if desired.
