Preheat the oven to 400 degrees F (200 degrees C).

Peel and cut the Sweet Potatoes (2.5 lb) and Onion (1) into 1-inch pieces.

Peel and mince the Garlic (2 cloves).

Finely chop the Fresh Herbs (1 tsp). You can use herbs like thyme, parsley, rosemary, etc.

In a large bowl, combine the sweet potatoes, onion, garlic, Dried Mixed Herbs (1 Tbsp), fresh herbs, Olive Oil (2 Tbsp), Maple Syrup (1 Tbsp), and Salt (1/2 tsp) and Ground Black Pepper (1/2 tsp).
step 5 In a large bowl, combine the sweet potatoes, onion, garlic, Dried Mixed Herbs (1 Tbsp), fresh herbs, Olive Oil (2 Tbsp), Maple Syrup (1 Tbsp), and Salt (1/2 tsp) and Ground Black Pepper (1/2 tsp).

Mix it all to combine, so that the potatoes are evenly coated by all the ingredients.

Transfer all the ingredients into a 13x9 inch rimmed baking dish. Cover the baking dish with aluminum foil or a cover.

Bake for about 30 minutes, until the potatoes are cooked through.

Uncover and cook for an additional 5-10 minutes, until the sweet potatoes and the onions turn golden. If you want a more roasted/charred flavor, you can turn on the broiler during the last 5 minutes of baking.
