Cooking Instructions

Step 1
Preheat the oven to 400 degrees F (200 degrees C).
Step 2
Peel and cut the Sweet Potatoes (7 1/2 cups) and Onion (1) into 1-inch pieces.
Step 3
Peel and mince the Garlic (2 cloves) .
Step 4
Finely chop the Fresh Herbs (1 tsp) . You can use herbs like thyme, parsley, rosemary, etc.
Step 5
In a large bowl, combine the sweet potatoes, onion, garlic, Dried Mixed Herbs (1 Tbsp) , fresh herbs, Olive Oil (2 Tbsp) , Maple Syrup (1 Tbsp) , and Salt (1/2 tsp) and Ground Black Pepper (1/2 tsp) .
Step 6
Mix it all to combine, so that the potatoes are evenly coated by all the ingredients.
Step 7
Transfer all the ingredients into a 13x9 inch rimmed baking dish. Cover the baking dish with aluminum foil or a cover.
Step 8
Bake for about 30 minutes, until the potatoes are cooked through.
Step 9
Uncover and cook for an additional 5-10 minutes, until the sweet potatoes and the onions turn golden. If you want a more roasted/charred flavor, you can turn on the broiler during the last 5 minutes of baking.
Step 10
Garnish with more fresh herbs and serve hot.
