Cook Pasta Shells (8 ounce) according to package directions and reserve 2 cups of pasta water.
Mince the Garlic (2 clove).
Shuck the Green Peas (1 cup).
Chop the Thick-Cut Bacon (4 slice) into 1/2 inch pieces.
If using, chop the Fresh Mint (1/4 cup).
In a large skillet over medium heat, render the fat from the bacon until it becomes crispy. Remove the bacon with a slotted spoon to drain on paper towels.
Remove and reserve all but 2 tablespoon bacon grease.
Reduce heat to medium-low. Add the garlic and saute until fragrant, about 30 seconds.
Add the peas and 1 cup of the pasta water. Simmer for 2 minutes if the peas are fresh.
Crumble in the Boursin® Garlic & Fine Herb Cheese (5 ounce) and stir until a smooth sauce forms. Thin with additional water if the sauce is too thick.
Gently toss pasta, sauce, mint, Parmesan Cheese (1/2 cup) and bacon together. Adjust seasoning to taste with extra Salt and Pepper (to taste).
Serve right away. Enjoy!
