Combine Eggs (2), Dijon Mustard (1 tsp), White Wine Vinegar (1 Tbsp) and Sea Salt (to taste) in a small, deep bowl.

Combine Olive Oil (1/2 cup) and Canola Oil (1/2 cup). Slowly drizzle oil into in the mixture while blending with a hand mixer. Continue blending until well combined and emulsified.
