In a medium saucepan, over medium heat, toast the Walnut (1 cup) until fragrant—about 2 minutes.
Let cool about 5 minutes before tossing with 1 tsp zest from the Sunkist Orange (1).
Roll the Plain Goat Cheese Log (1) into toasted walnuts, pressing firmly until the whole log is covered.
Serve same day with pairings of choice. I used herb crackers, olives, candied oranges, honey, prosciutto, and almonds.
