Preheat your oven to 400 degrees F (205 degrees C).
Peel off the skin of the Jicama (1). Chop jicama into matchstick-style fries.
Toss fries in a bowl with the juice of the Lime (1), Creole Seasoning (1 teaspoon) and Olive Oil (1 tablespoon). Transfer fries to a baking sheet, discarding the excess liquid.
Bake at 400 degrees F (205 degrees C) for around 45 minutes, until well browned all around, stirring every 10 minutes so they cook evenly.
Serve with your favorite dipping sauces for fries.
