Worcestershire Sauce
1 tsp
Minced Garlic
1/4 cup
Mayonnaise
2 Tbsp
Blue Cheese , crumbled
2
Scallions , diced

Step 1
Peel and cube the Sweet Potatoes (4 cups) into 1-inch cubes.
Step 2
Add potatoes to a large pot, covering completely with water. Add Salt (1 tsp) to pot.
Step 3
Bring to a boil and cook 8-12 minutes, or until fork tender. Drain well with a colander.
Step 4
In a large bowl combine the Lemon Juice (1 Tbsp) , Worcestershire Sauce (1/2 Tbsp) , Apple Cider Vinegar (1 Tbsp) and Garlic (1 tsp) . Toss with this the sweet potatoes and refrigerate until cold.
Step 5
When ready to serve (even if it's the next day), mix with the potatoes the Mayonnaise (1/4 cup) , Sour Cream (1 Tbsp) and Blue Cheese (2 Tbsp) . Top with the Scallions (2) .
