De-core and halve the Plum Tomato (1 lb). Place plum tomato in a baking sheet and toss with Olive Oil (2 Tbsp). Roast at 400 degrees F (200 degrees C) for 15 minutes.

Add olive oil to a pan and sauté Onion (1/2) and Garlic (3 cloves). Cook until translucent.

Purée the roasted tomatoes.

Strain the tomato purée through a sieve to remove the seeds.

Add strained purée to the pot with garlic and onions and simmer. Add Tomato Paste (2 Tbsp), Brown Sugar (2 Tbsp), Honey (1 Tbsp), Apple Cider Vinegar (2 Tbsp), Ground Allspice (as needed), Dry Mustard (as needed), Salt (to taste) and Ground Black Pepper (to taste). Purée mixture.

Transfer into an airtight container. Serve and enjoy!
