Step 1
De-core and halve the
Plum Tomatoes (1 lb)
. Place plum tomato in a baking sheet and toss with
Olive Oil (2 Tbsp)
. Roast at 400 degrees F (200 degrees C) for 15 minutes.
Step 2
Add olive oil to a pan and sauté
Onion (1/2)
and
Garlic (3 cloves)
. Cook until translucent.
Step 3
Purée the roasted tomatoes.
Step 4
Strain the tomato purée through a sieve to remove the seeds.
Step 5
Add strained purée to the pot with garlic and onions and simmer. Add
Tomato Paste (2 Tbsp)
,
Brown Sugar (2 Tbsp)
,
Honey (1 Tbsp)
,
Apple Cider Vinegar (2 Tbsp)
,
Ground Allspice (1/8 tsp)
,
Dry Mustard (1/8 tsp)
,
Salt (to taste)
and
Ground Black Pepper (to taste)
. Purée mixture.
Step 6
Transfer into an airtight container. Serve and enjoy!
