Step 1
Get the
Steak (1)
out of the fridge half an hour before cooking and put on a plate or in a bowl with a slosh of
Light Soy Sauce (to taste)
. It cooks better from room temperature.
Step 2
In a bowl put
Fish Sauce (1 Tbsp)
,
Lime (1)
,
Granulated Sugar (1 tsp)
, and
Crushed Red Pepper Flakes (to taste)
. Stir to dissolve the sugar and then add your sliced
Scallions (1 bunch)
.
Step 3
Shred some
Little Gems Lettuce (1)
and put it on a plate, and chop some
Fresh Cilantro (to taste)
and
Fresh Mint Leaves (to taste)
. Prepare a few slices of
Red Chili Pepper (1)
ready to serve.
Step 4
Cook the steak under the grill, much more slowly than if cooking a steak to eat whole in a pan or griddle. I cooked mine 7 minutes each side.
Step 5
Let the steak rest for 4 or 5 minutes, then slice crossways into thin slices.
Step 6
Add the steak to the bowl of dressing and stir or scrunch (get your hands in there!) to combine.
Step 7
Put the steak mixture on top of the lettuce and pour over all the dressing.
Step 8
Top with the
Fresh Cilantro (to taste)
and
Fresh Mint Leaves (to taste)
, and a few slices of red chilli. Enjoy!
