Preheat oven to 325 degrees F (160 degrees C).
Grease 8-inch baking dish with Coconut Oil (1 tablespoon).
Thinly slice the Apple (3).
Mix Pure Maple Syrup (1/2 cup), Coconut Brown Sugar (1/4 cup), Ground Cinnamon (1 teaspoon), and Vanilla Extract (1 tablespoon) in a small bowl.
Place apples in baking dish and pour mixture over the top of the apples. Use a spatula to thoroughly coat apples.
Top with Bear Naked® Sea Salt Caramel Apple Granola (2/3 cup).
Melt Coconut Oil (1 tablespoon) and pour on top of the granola.
Bake for 20-25 minutes or until top is golden brown.
Serve immediately with Vegan Whipped Cream (to taste) or coconut ice cream. Enjoy!
