Step 1
Prep the mixture overnight. Put
Chia Seeds (2 Tbsp)
,
Ground Flaxseed (1 tsp)
,
Oats (1/3 cup)
,
Vanilla Extract (1 dash)
,
Maple Syrup (1 Tbsp)
, and
Non-Dairy Milk (1 cup)
in a jar and mix them all very well to get the full benefit. To add an extra layer of color, split the ingredients in a different jar and add
Matcha Powder (1 Tbsp)
.
Step 2
To make the pandas, mix the
Sweet Glutinous Rice Flour (1/2 cup)
and
Silken Tofu (2.5 oz)
on your hand until dough becomes smooth.
Step 3
Separate 1/3 of the dough and knead again with
Unsweetened Cocoa Powder (2 Tbsp)
.
Step 4
Make the pandas! When attaching ears to the face or limbs to the body, make sure the dough is sticky enough to stick together, otherwise they might fall apart when boiling. No one likes earless pandas!
Step 5
Toss the pandas gently in a boiling water with a low heat, and cook them till they float, about 10 minutes.
Step 6
Drain the pandas and keep them in fresh water to store in the fridge. I used baking sheets to prevent my pandas from sticking to the container.
Step 7
Make the banana smoothie with the
Bananas (1 cup)
,
Non-Dairy Milk (1/2 cup)
, and
Vanilla Extract (1 dash)
and you are good to go!
Step 8
Cut the
Fresh Fruits (to taste)
into small pieces.
Step 9
Assemble by layering your parfait, first with matcha pudding, then smoothie, fruits, regular pudding, and then matcha pudding to finish it off. Place the panda at least and make sure you pur some extra on top so it looks like he's taking a bath!
