Season the sauce later on right before you puree it and do lots of tasting.

If you like a chunkier sauce, you can puree half the tomatoes and leave the rest as it is then mix them up.

Chop Tomatoes (3) into small pieces and pulse in a food processor or just roughly chop them into small pieces.

Chop the Garlic (5 cloves) and toss them into a hot pan. Add Extra-Virgin Olive Oil (1 Tbsp) and saute over medium heat for a minute until it starts to change color.

Sauté the garlic until it begins to give off that first whiff of garlicky scent. Take care not to burn it.

Add the tomatoes and let it reduce over medium-low heat until all the water has evaporated.

Once reduced and you have around 5 minutes to go, throw in a couple of Fresh Basil (to taste).

Remove the pan from the heat. Puree everything in the blender until you have a smooth sauce.

Put sauce back in the pan and add the Salt (to taste), Freshly Ground Black Pepper (to taste), Granulated Sugar (to taste), and Fresh Oregano (to taste) and other herbs you want at this point.
