Step 1
Chop
Tomatoes (3)
into small pieces and pulse in a food processor or just roughly chop them into small pieces.
Step 2
Chop the
Garlic (5 cloves)
and toss them into a hot pan. Add
Extra-Virgin Olive Oil (1 Tbsp)
and saute over medium heat for a minute until it starts to change color.
Step 3
Sauté the garlic until it begins to give off that first whiff of garlicky scent. Take care not to burn it.
Step 4
Add the tomatoes and let it reduce over medium-low heat until all the water has evaporated.
Step 5
Once reduced and you have around 5 minutes to go, throw in a couple of
Fresh Basil (to taste)
.
Step 6
Remove the pan from the heat. Puree everything in the blender until you have a smooth sauce.
Step 7
Put sauce back in the pan and add the
Salt (to taste)
,
Freshly Ground Black Pepper (to taste)
,
Granulated Sugar (to taste)
, and
Fresh Oregano (to taste)
and other herbs you want at this point.
