Place a large pot on your stove over medium-high heat. Add in some
Vegetable Oil (to taste)
Yellow Onion (1)
Garlic (2 cloves)
and cook for a couple of minutes or until the onions start to soften slightly.
Next add in the
Ground Beef (2.2 lb)
and break it down using a wooden spoon. Cook for about 5 minutes or until the meat has browned.
Drain any excess grease from the ground beef. Add
Taco Seasoning (1/3 cup)
Taco Sauce (1 cup)
Water (2 cups)
Beef Stock (4 cups)
and give it a good stir.
Add in the
Elbow Macaroni (5 cups)
and give it a gentle stir. Once the pot comes up to a boil, turn the heat down to low and let it simmer uncovered for about 15 minutes, while giving it a stir every few minutes.
Raise the heat back up to medium and continue to gently stir until almost all the liquid has been absorbed. Turn off your heat. Season at this point with
Salt and Pepper (to taste)
Cheddar Cheese (3 cups)
and incorporate gently until cheese melts through. Serve with toppings of choice and enjoy.
