Preheat oven to 350 degrees F (175 degrees C). Place Baguette (1) sliced on a baking sheet.
Bake 10 -12 minutes or until lightly toasted.
Meanwhile, mix the Plain Goat Cheese Log (2) and Honey (2 tablespoon) until relatively smooth. It’s okay if it's a little crumbly.
Spread the goat cheese mixture on the toasted bread (while it's still warm). Top with a sprinkle of Pecans (1/4 cup), Fresh Thyme Leaves (1/2 teaspoon), Sea Salt (to taste), and Ground Black Pepper (to taste), if desired.
Before serving, drizzle each crostini with honey. Keep leftovers covered tightly in the refrigerator for a couple days.
