This bowl, oh this bowl is SO creamy and flavourful it will give you that extra push to get you out of bed on a Monday morning! The recipe is dairy-free and fully vegan. Of course you can use cow milk if you prefer, but I would not recommend to replace the coconut milk, as it does actually add some special flavour and creaminess to the recipe.

Step 1
Slice up the Red Apple (1) , and remove the central seeds.
Step 2
In a skillet, melt the Coconut Oil (2 Tbsp) and Maple Syrup (1 1/2 Tbsp) .
Step 3
Add the sliced apple and cook for 1 minute, then add Orange Juice (1 Tbsp) . Let cook for 4 min or until apple turns soft. Set aside
Step 4
In a saucepan, bring Coconut Milk (7 oz) , Soy Milk (3.5 oz) , Water (3.5 oz) , Star Anise (1) , Vanilla Extract (1/2 tsp) , and Ground Cinnamon (1/2 tsp) to a boil
Step 5
Add the Old Fashioned Rolled Oats (1 cup) . Turn down to low heat, let the oats simmer while you stir with a whisk (about 10-15 min). When creamy, add the Almond Butter (1 Tbsp) and stir it in. Turn the heat off.
Step 6
Pour the oatmeal in 2 serving bowls. Top with the cooked apple and the juice. Serve it right up! (Don't eat the star anise, it's just for flavoring).
