Creamy Apple Spiced Oatmeal

This bowl, oh this bowl is SO creamy and flavourful it will give you that extra push to get you out of bed on a Monday morning! The recipe is dairy-free and fully vegan. Of course you can use cow milk if you prefer, but I would not recommend to replace the coconut milk, as it does actually add some special flavour and creaminess to the recipe.

In a saucepan, bring Coconut Milk (7 oz), Soy Milk (3.5 oz), Water (3.5 oz), Star Anise (1), Vanilla Extract (1/2 tsp), and Ground Cinnamon (1/2 tsp) to a boil

Add the Old Fashioned Rolled Oats (1 cup). Turn down to low heat, let the oats simmer while you stir with a whisk (about 10-15 min). When creamy, add the Almond Butter (1 Tbsp) and stir it in. Turn the heat off.
