Slice up the Red Apple (1), and remove the central seeds.
In a skillet, melt the Coconut Oil (2 tablespoon) and Maple Syrup (35 gram).
Add the sliced apple and cook for 1 minute, then add Orange Juice (15 milliliter). Let cook for 4 min or until apple turns soft. Set aside
In a saucepan, bring Coconut Milk (200 gram), Soy Milk (100 gram), Water (100 gram), Star Anise (1), Vanilla Extract (1/2 teaspoon), and Ground Cinnamon (1/2 teaspoon) to a boil
Add the Old Fashioned Rolled Oats (100 gram). Turn down to low heat, let the oats simmer while you stir with a whisk (about 10-15 min). When creamy, add the Almond Butter (20 gram) and stir it in. Turn the heat off.
Pour the oatmeal in 2 serving bowls. Top with the cooked apple and the juice. Serve it right up! (Don't eat the star anise, it's just for flavoring).
