Author's Notes

This easy salad can be made with leftover grilled chicken, baked chicken or rotisserie chicken. Serve it up on lettuce or a croissant roll for a fancy touch. Store chicken salad in a covered container in the refrigerator for up to four days.

Cooking Instructions

Step 1
Combine the Shredded Chicken (5 cups) , Red Grapes (1 1/2 cups) , Chopped Pecans (3/4 cup) , and Scallions (1/4 cup) in a large bowl and toss to combine.
Step 2
Add the Mayonnaise (1 1/4 cups) , Salt (to taste) , and Ground Black Pepper (to taste) , and stir until well coated.
Step 3
Serve immediately or cover and chill until cold, 1 to 2 hours. Taste for seasoning. Serve on Croissants (12) with Butter Lettuce (1) leaves.
