This is my Mother's amazing recipe, serve with a side of veggies for an easy meal. This recipe works best with a leaner meat such as turkey, venison or a super lean beef (like 90/10 ground beef). The fattier the meat is, the more likely you will encounter grease issues. The lean meat will not take away from the flavor AT ALL, I promise. It’s the magic of this recipe!

Ground Black Pepper
Preheat oven to 350 degrees F (180 degrees C). Coat a 5x9 loaf pan with cooking spray and set aside. Finely chop the Onions (1/3 cup). Crush the Ritz® Crackers (1 cup). Beat the Egg (1).
In a large bowl, combine the Ground Beef (2 lb), onion, Ritz® Crackers, beaten egg, Milk (1 cup), Ketchup (1/2 cup), Garlic Powder (1/2 tsp), Salt (1 tsp) and Ground Black Pepper (1/2 tsp). Mix together with your hands until combined.
Pour the mixture into the prepared pan and spread evenly. Place the pan on a rimmed baking sheet and bake in the preheated oven for 1 1/2 hours.
In a small bowl, mix Ketchup (3/4 cup), Brown Sugar (1/4 cup), Apricot Preserves (1/4 cup), and Worcestershire Sauce (1 Tbsp). Mix well.
Spread half of the mixture evenly over the meatloaf halfway through baking.
Reserve the remainder of the sauce for dipping and/or topping. Let meatloaf sit for 15 minutes before slicing and serving.
