Sour Cream

Crushed
Corn Flakes
or Panko Bread Crumbs

Minced
Scallions
or Any Kind of Onion

Tbsp
Butter
•
to taste
Salt
•
to taste
Ground Black Pepper

as needed
Oil
Cooking Instructions
1.
Pour off juice from Salmon (1 can) and remove skin and bones.
2.
Flake the salmon and mix with the Eggland's Best Classic Eggs (4), Sour Cream (1 cup), Corn Flakes (1 cup), Scallions (2 Tbsp), Salt (to taste), and Ground Black Pepper (to taste).
3.
Coat a pan with Butter (2 Tbsp) and Oil (as needed) so it coats the pan, not for deep frying, but enough to have them cook crispy.
4.
Spoon a heaping tablespoon of the salmon mixture into the pan to make the patties. Flip when brown on one side.
5.
When they’re crispy on the edges, serve and enjoy with sides of your choice.
Author's Notes
Some substitutions for Panko Breadcrumbs are Saltines, Rolled Oats, or Potato Chips.
