Ginatanag Sitaw at Kalabasa (Roasted Vegetables with Coconut Ginger Gravy)
Ginatanag is the Filipino term for cooking in coconut milk. In this dish, we are first roasting some squash and beans and then garnishing with the coconut ginger gravy on top.
This dish can be made with any vegetables that can be roasted such as zucchini, broccoli and other kinds of root vegetables. Look for what is in season.
