To add extra flavor, I marinated the lamb with garlic, rosemary, salt, and olive oil for 3 hours prior to roasting.

Good Choice! You're saving time and energy with your oven as it doesn't require preheating. So let’s get started by removing the Leg of Lamb (4 lb) from the marinade and letting the excess drip back into the bag.

Place the leg on a plate and season generously with Garlic (1 head), Fresh Rosemary (3 sprigs), and a bit Coarse Salt (to taste) and Ground Black Pepper (to taste).

Pour the marinade into a roasting pan and add Mixed Vegetables (2 cups). Toss with Extra-Virgin Olive Oil (1/2 cup) and season with Coarse Salt (to taste) and Ground Black Pepper (to taste).

Arrange the seasoned leg on top of the vegetables and take the meatprobe. Insert this magic wand it in the middle of the meat, parallel to the bone.

You start the magic by simply saying 'Alexa, start oven'. This will provide you with perfectly pink and tender meat in about 2 hours.
