Preheat oven to 375 degrees F (190 degrees C).
Chop the Sweet Potato (1 1/2 cup), Onion (3/4 cup), Bell Pepper (1/2 cup), and Broccoli (1/3 cup).
Spray baking sheet with coconut oil cooking spray.
Lay veggies out in a single layer on the baking sheet and roast for 10 minutes.
Remove pan, stir veggies, and bake for another 10 minutes or until soft.
Meanwhile, put the Whole Wheat Pita Bread (2) on a pan and bake them in the oven for 7-10 minutes to make them crispy. If you want a soft crust, skip this step or only bake them for 5 mins.
Once veggies have roasted, remove pita bread and veggies from the oven.
Top each pita bread with Barbecue Sauce (1/3 cup), then add the roasted veggies, and the top with Mozzarella Cheese (1/4 cup).
Bake for another 5 minutes or until cheese has melted.
