Step 1
Preheat oven to 375 degrees F (190 degrees C).
Step 2
Chop the
Sweet Potatoes (1 1/2 cups)

Onions (3/4 cup)

Bell Peppers (1/2 cup)

Broccoli (1/3 cup)

Step 3
Spray baking sheet with coconut oil cooking spray.
Step 4
Lay veggies out in a single layer on the baking sheet and roast for 10 minutes.
Step 5
Remove pan, stir veggies, and bake for another 10 minutes or until soft.
Step 6
Meanwhile, put the
Whole Wheat Pita Bread (2)
on a pan and bake them in the oven for 7-10 minutes to make them crispy. If you want a soft crust, skip this step or only bake them for 5 mins.
Step 7
Once veggies have roasted, remove pita bread and veggies from the oven.
Step 8
Top each pita bread with
Barbecue Sauce (1/3 cup)
, then add the roasted veggies, and the top with
Mozzarella Cheese (1/4 cup)
.
Step 9
Bake for another 5 minutes or until cheese has melted.
