Place Mini Watermelon (2 pound) on your serving dish.
In a small bowl, whisk Extra-Virgin Olive Oil (2 tablespoon) and Balsamic Vinegar (1 tablespoon) until well combined. Drizzle dressing over the watermelon.
Add Feta Cheese (1/2 cup), Purslane (2 cup), Red Onion (to taste), and Fresh Mint (to taste) to the top of the salad.
